DANAKSARA: WHERE CENTRAL VIETNAMESE MEMORIES ARE TOLD THROUGH FLAVOUR

Some restaurants start with a business idea. Some restaurants start with a dish. Danaksara, however, started with a question: “How can a restaurant truly belong to the land where it exists?”

The final answer did not just create a name or a menu. It created the story of Danaksara – the story of Da Nang, of Central Vietnam, of the memories of a land and the people who grew up with the flavors here.

Danaksara restaurant space
The space of Danaksara restaurant is located within the grounds of Furama Villas Da Nang.

From a competition to find a name for the restaurant

When Furama Villas Da Nang was preparing to establish a restaurant specializing in Central Vietnamese cuisine, the first question was not what the restaurant would serve. But rather: “What will the restaurant be named?”

Furama organized a competition to find a name for the restaurant with the hope that the name would have a real connection to the land of Da Nang. Among the proposed ideas, “Danak” was finally chosen – an ancient name associated with Da Nang. But a restaurant needs more than just historical depth. It also needs grace, warmth, and vitality. “Danak” was therefore combined with “Sara” – a feminine name evoking the image of a beautiful, graceful, and noble woman. Previous Furama documents interpreted “Sara” as a high-class woman, a “princess” or “noblewoman”; some introductory articles about Danaksara also use the image of a talented and beautiful princess. (Thanh Nien Newspaper)

And DANAKSARA was born. A name with the resonance of the land but also the softness of a daughter. If Danak represents the memory of Da Nang, then Sara can be imagined as the daughter of that land – graceful, sincere, cherishing family values, and bringing the delicacies of her homeland to welcome guests from afar.

Right from its name, Danaksara identified itself as not just any restaurant that could be placed in any city. Danaksara belongs to Da Nang.

Meaning of Danaksara name
The name “DANAKSARA” is a combination of “Danak” and “Sara,” meaning a graceful and beautiful Da Nang girl.

A restaurant on a land of memories

The location of Danaksara also carries a special story. Amidst the green space of Furama Villas Da Nang today, few can imagine that part of this land once belonged to the Nuoc Man airfield area, associated with a turbulent period in Da Nang’s history. Furama itself, when introducing Danaksara from the early days, mentioned this layer of memory of the land. (Furama Vietnam)

Time has passed. Where the sound of aircraft engines was once heard, today it is the sound of wind through the trees. Where war was once witnessed, today families gather around the dinner table. A land carrying memories of the past has become a place for creating new memories.

Danaksara treasures that transition. Therefore, the images of old Da Nang preserved and displayed in the restaurant space are not just for decoration. They are part of the story. The photos take viewers back to a Da Nang of previous decades: a simple city by the sea, old roads, street corners, people, and a pace of life that has gradually become a memory. Guests coming to Danaksara, therefore, do not just see Da Nang today. They are invited to look back at what Da Nang used to be.

But what should a destination restaurant serve?

After having a name, another question appeared: “Which menu truly represents this land?”

The Head Chef prepared the first menu and presented it to the General Manager of Furama Resort Da Nang, Mr. Nguyen Duc Quynh. It was a menu with many delicious dishes. But after reviewing it, Mr. Quynh still felt something important was missing: “Are these truly the dishes that the people of this land eat and remember?”

A restaurant in a 5-star resort can easily build a menu in the usual way: choose the most famous local dishes, present them more beautifully, add premium ingredients, and introduce them as “local cuisine.” But that doesn’t necessarily touch the soul of the cuisine. Because the food of a land is not just in a cookbook. It lies in the memories of the people who lived there.

“Write down 5 dishes you miss the most when you are away”

Instead of asking the Head Chef to revise the menu once more, Mr. Quynh invited chefs and restaurant staff who are from Quang Nam – Da Nang to participate. Each person received a very simple request: Write down 5 dishes you always want to eat, 5 dishes your family often cooks, and 5 dishes you always remember when you are away.

Not the five most luxurious dishes. Not the five dishes that can be sold at the highest price. Not necessarily the five dishes that tourists know most about. Just the dishes you truly remember.

And interesting things started to happen. Someone remembered their mother’s braised fish. Someone remembered their grandmother’s vegetable soup. Someone remembered Mi Quang. Someone remembered fried flying fish with chives. Someone remembered sweet potato leaves with shrimp paste. Another remembered a very ordinary dish their family had eaten since childhood.

From those answers, a treasury of culinary memories gradually emerged. Each person’s memory became the memory of a community. And from there, the Danaksara menu was formed.

Dishes chosen not for being famous – but for being remembered

That is why the Danaksara menu has dishes very different from the usual “Vietnamese food” menu of an international hotel.

Beside dishes tourists already know like Mi Quang, Hue beef noodle soup, or Da Nang fish cake noodle soup, Danaksara also introduces much more rustic dishes: braised Ca Can fish with turmeric, braised anchovies with starfruit, fried flying fish with chives, jackfruit soup with shrimp, Malabar spinach soup with field crab, sweet potato leaves cooked with shrimp paste, braised snails with bananas, roasted pork with Banh Hoi… These dishes have appeared in Danaksara’s culinary story from the early days. (Furama Vietnam)

These are not dishes created to impress with luxury. Their value lies in memory.

A Central Vietnamese person might see a dish and remember their mother’s kitchen. A Da Nang person living far from home might recognize a flavor they had long forgotten. For international guests, these dishes open another door to understanding Vietnam – not the Vietnam performed for tourists, but the Vietnam in everyday meals.

One place – many flavors that Da Nang people usually have to go to many places to find

Da Nang cuisine has an interesting characteristic. Delicious dishes often have their own specific addresses. To eat Mi Quang, locals have a familiar Mi Quang shop. To eat rice paper rolls with pork, they go to another shop. Fish cake noodle soup has specialized stalls. Fish dishes, shrimp paste dishes, snail dishes, rustic soups, or family meals are found in small eateries, markets, or in each family’s own kitchen.

For locals, that is natural. But a tourist who only has two or three days in Da Nang – especially international guests – rarely has the opportunity to explore everything.

Danaksara brings those flavors under one roof. Not to replace the city’s long-standing eateries, but to become a gateway into the world of Central Vietnamese cuisine. A table at Danaksara can take diners from Quang Nam to Da Nang, from Hue down the Central coast, from street food to family meals.

That is the most important difference of the restaurant: Danaksara does not gather famous dishes. Danaksara gathers dishes that Central Vietnamese people remember.

Mother’s dishes in a 5-star restaurant

Bringing those dishes into Furama Villas posed another challenge. How to serve a rustic dish in a 5-star resort environment without losing its rustic flavor?

Danaksara chose a very clear path:

  • Elevate service standards – but do not change the soul of the dish.
  • Ingredients must be well-selected.
  • Hygiene and processes must meet international hotel standards.
  • Presentation must be sophisticated.
  • Service must be professional.

But when a person from Quang Nam eats Mi Quang, they must still recognize Mi Quang. When a Central Vietnamese person eats braised fish or jackfruit soup, that flavor must still evoke something familiar.

Current Danaksara content continues to develop in this spirit, emphasizing home-cooked meals, recipes recalled from the memories of grandmothers and mothers, and the use of round wooden trays as a symbol of togetherness. (Furama Vietnam)

That is Soulful Culinary: Food is not just delicious. Food must have a soul.

A small museum without glass cases

Perhaps that is why the photos of old Da Nang in Danaksara carry special meaning. If food preserves memory through taste, then photos preserve memory through images. The two meet in the same space.

Guests can look at a photo of Da Nang from the past and then enjoy a dish that many Central Vietnamese families have cooked for generations. No need for glass cases like a museum. No need for long explanations.

A photo. A dish. A story from the staff. A flavor that suddenly triggers a memory. All together telling the story of a land. In that sense, Danaksara can be seen as a living culinary heritage house – a space of living culinary heritage.

Here, heritage does not stand still. It is cooked every day. Served every evening. Shared around a dinner table.

From old Da Nang to today’s Da Nang

Danaksara was born at Furama Villas in 2018 and was refreshed, returning in 2025, but the core spirit remains the same: honoring Central Vietnamese cuisine and family-flavored meals.

This is also very suitable for the land where the restaurant exists. From the Nuoc Man airfield of a turbulent time to the lush green Furama Villas today. From the Da Nang of old photos to an international tourist city. From dishes in a family kitchen to a dining table welcoming guests from all over the world.

Some things have changed a lot. But there are also things worth keeping. A flavor. A memory. The way a mother seasons a dish. An old photo. A story of the city.

Those are the things Danaksara wants to preserve.

DANAKSARA – THE HOUSE OF CENTRAL VIETNAMESE CULINARY MEMORIES

If the entire Danaksara brand had to be condensed into one idea, it shouldn’t just be:

“Authentic Central Vietnamese Cuisine.”

That is true, but not enough. Danaksara has a deeper story: The name was born from the memory of the land. The space preserves images of old Da Nang. The menu was written from the memories of the people of Quang Nam – Da Nang. And those dishes are served to create new memories for people from all over the world.

Therefore, the positioning I propose for Danaksara is:

DANAKSARA – The House of Central Vietnamese Culinary Memories

And the brand promise can be very simple: FROM OUR MEMORIES TO YOUR TABLE.

This is also how Danaksara fulfills a larger mission of Furama: not just serving guests at a destination, but preserving the values of that destination and introducing them to the world.

Because in the end, what makes people remember a land is sometimes not a grand structure. It’s just a flavor. A meal. An old photo. And the feeling that, even though it’s the first time here, we seem to have once belonged to this place.
